The video was so easy to follow. I was able to make one with no trouble. My only question is if there is a written version of the pattern so I can follow that and just churn these squares out to make a blanket without watching the video over and over again.

There are to many beautiful options for borders. I always like to just make 3 rounds of hdc for borders.

I have not tried this myself, but i guess that You can. But you will not be able to crochet it in rounds, so it will look a little bit differet. You will have to start with making 8 dc in the circle, chain and turn the work.
About how much yarn do you use for each granny square?
Im sorry to say that I actually don´t remember. I think it might be about half a skein of 50 a grams ball. But it will depend on how thick your yarn is.
